Recently, we supplied an Austrian customer with a trolley type 12-tray electric heated commercial food steamer and a trolley type 24-tray cooling cabinet. The customer’s goal was to steam fresh fish strips and cubes to 90°C in the food steamer, transfer them seamlessly into the cooling cabinet, and then proceed to freeze-dry them in a freeze dryer for pet food production. Both the steam cabinet and cooling cabinet are equipped with sturdy, durable 2.5 cm deep perforated trays and come with three identical trolleys. This design allows operators to easily push the trolleys directly from the steamer into the cooling cabinet, significantly boosting productivity and ensuring precise, efficient handling of the products.

If local regulations restrict appliance power consumption, a steam-heated version is a better choice. Furthermore, we offer a wide range of tray counts, including 6, 8, 10, 12, 15, 22, 30, 36, 48, and 60 trays. The door design varies depending on the number of trays. Single-door models are available with 4, 6, 8, 10, 12, and 15 trays, suitable for small to medium-sized businesses. Double-door models come with 24, 30, 48, or 60 trays, ideal for large-volume cooking. The three-door design has 36 trays, balancing capacity and space utilization. This variety ensures you can choose the perfect size that best suits your workshop output and space constraints.

2.Optional Temperature Control and Timer Functions

Our customer opted for a temperature control and timer control panel on his trolley-type commercial food steamer. This allows for precise temperature and time adjustments, perfectly meeting his requirement to steam fish and meat at 90 degrees Celsius. The control panel is user-friendly and easy to operate, allowing for temperature adjustments between 0-100 degrees Celsius. Chefs can easily set the desired temperature within this range to ensure compliance with food production standards. The timer function is another key feature of the commercial food steamer. The design balances scientific principles with practicality, featuring a standard 8.5 cm tray spacing for optimal steaming efficiency. You can flexibly customize the tray depth and choose perforated trays to improve steam circulation, or flat trays suitable for specific products. We can even produce thicker trays if needed. The standard size of a shallow steaming tray is 60 cm x 40 cm x 2.5 cm, suitable for steaming smaller, lighter foods. Deep steaming trays, measuring 60 cm x 40 cm x 4.8 cm, are suitable for steaming larger or heavier foods. Our customer’s fish strips were only 2*4*2 cm in size, so a perforated 2.5 cm deep tray was chosen. You can select the most suitable tray type and size based on your steaming needs.

The system also features a low-water alarm that automatically detects low water levels, preventing sudden power outages and dry-burning of the tank. When the water level is low, the system automatically cuts off the power and sounds an alarm to alert staff.

6. Automatic Water Filling Device

The integration of the automatic water filling device marks a significant advancement in commercial food steamer technology. This newly upgraded feature incorporates anti-dry-burning technology, solving a common problem in commercial kitchens. With the level float system, users no longer need to worry about water levels or the potential dangers of dry-burning. The fully automatic water filling system maintains optimal water levels—thanks to the stainless steel level control float and float sensor design, the system automatically adds water when needed and automatically stops when the tank is full. Because the float sensor can detect water levels, it automatically shuts off and cuts off the power when the water level is too low, preventing damage to the equipment and ensuring uninterrupted cooking. 7.Clear Temperature Display

Our commercial food steamer features an intuitive temperature display with a range of 0-150℃, clearly showing the steam temperature inside the cabinet and confirming the heating status of the steamed food to prevent uneven cooking. If the pointer remains below 100℃ for an extended period, it quickly indicates a malfunction in the heating system (heating element, steam valve). The 150℃ upper limit covers the extreme operating temperature of the steamer, preventing overheating risks. It meets the temperature monitoring requirements for food processing equipment, facilitating hygiene control in the kitchen. Annual calibration is recommended to ensure accurate temperature measurement; avoid violent impacts and direct steam blowing on the dial. Compared to electronic thermometers, this instrument panel requires no power supply, is moisture-resistant, corrosion-resistant, and has a long lifespan, making it perfectly suited for the high-temperature and high-humidity environment of a kitchen. Compared to mercury thermometers: it is mercury-free, provides clear readings, has a safer mechanical structure, and meets food equipment safety standards; on-site readings are readily available, requiring no additional wiring.

This cooling cabinet is available in various configurations to suit different needs, including single-door, double-door (top and bottom), double-door (left and right), and four-door (cross) designs. We also offer a wide range of tray options, including 6, 8, 10, 12, 15, 22, 30, 36, 48, and 60 layers, as well as a trayless model. This flexibility allows you to balance capacity and space utilization effectively, ensuring you select the ideal size for your available space and operational requirements. In this case, our Austrian customer chose a double-door, 24-tray model to maximize production capacity while matching the size of the steamer trolley. This configuration was perfectly suited to his fish stick production volume and available space, demonstrating how our customizable options can meet specific industrial needs efficiently.

2.User-Friendly Control Panel

Our cooling cabinet features a user-friendly digital electronic control panel with clearly labeled, easy-to-operate buttons. These include a power switch, precise temperature adjustment controls, and additional settings for customization. The temperature can be accurately set within a range of 0 to 10°C, providing effortless control over cooling conditions. This intuitive design allows operators to quickly and easily adjust the temperature to meet specific refrigeration and cooling needs, ensuring optimal performance for various applications. 3.304 Stainless Steel Tray  

Our cooling cabinet is equipped with a 400mm x 600mm 304 stainless steel tray, known for its rust resistance and easy cleaning, ensuring food safety—especially important since many customers handle food directly. The trays are available in depths of 25mm and 48mm to accommodate various food sizes. We offer both perforated and non-perforated tray options. For raw foods that require an appealing presentation, such as momos, dumplings, and pizzas, non-perforated trays are recommended. In contrast, perforated trays are ideal for cooked foods, foods with moisture, and vegetables, as they promote quick and even cooling. In this case, our Austrian customer chose perforated trays to facilitate rapid cooling of fish strips and pieces.

4.Automated Defrosting System

This cooling cabinet features a powerful direct-cooling fan and an advanced rapid defrosting system. The heat exchange fan, also known as the evaporator fan unit, is a key component that drives high-speed airflow through the low-temperature evaporator coils. This process quickly removes heat and generates a low-temperature airflow, ensuring full-area cold air circulation within the cabinet. The directional airflow design guarantees uniform temperature distribution across different corners of the cabinet, preventing localized temperature variations. Forced convection rapidly cools newly placed food, maintaining a stable low temperature essential for preservation. When combined with the automated defrosting system, the airflow helps distribute defrosting water efficiently, significantly improving defrosting effectiveness. Additionally, this even cold air circulation reduces moisture loss from food surfaces and minimizes temperature fluctuations, ultimately extending the shelf life of stored products.

For this Austrian customer, we customized two motors: one for single-phase 230V, 50Hz, and another for three-phase 400V, 50Hz.
