This innovative continuous dough divider utilizes a piston-driven cutting mechanism, enabling high-speed, uninterrupted production. Unlike traditional spiral extrusion methods, it is compatible with both fermented(baguette, sourdough bread, ciabatta, rye bread, focaccia, croissants, bagels, pretzels, german pumpernickel, sourdough pizza, etc) and non-fermented dough(biscotti, shortbread cookies, scones, sugar cookies, muffins, pound cake, american biscuits, non-fermented croissants, cake layers, pie crusts,etc), preserving yeast activity in the latter. Maintaining an optimal dough temperature of around 26°C during fermentation is crucial for best results. Once kneaded, dough should be placed in the hopper and processed within five minutes to ensure freshness and consistency. For optimal slitting, allow the dough to rest no longer than 10 minutes before weighing, and aim for a moisture content between 45% and 70%. This flexibility makes the machine suitable for a wide range of dough applications, from bread to pastries, ensuring efficiency and quality in every batch.

Simple Control Panel Design

The control panel of the continuous dough divider features an intuitive design with only essential buttons and switches, ensuring ease of operation even for beginners. To power on the machine, first activate the emergency stop switch, which enables normal operation. On the left side of the panel, an LCD screen displays the motor frequency, adjustable via the black knob on the right. Turning this knob clockwise increases the value, raising the motor frequency in Hertz (Hz), with a maximum of 50Hz and a recommended minimum of 15Hz for initial dough sizing and cleaning purposes. A higher frequency results in faster machine operation, while a lower frequency slows it down. Beneath the panel are a red stop button and a green start button for quick control, complemented by a black knob for simple machine startup, ensuring safe and efficient operation.

Precise Weight Adjustment

This continuous dough divider can accurately regulate dough weights ranging from 8 grams to 500 grams. For example, our Canadian customer tested dough weighing 75 grams. To adjust the weight, remove the protective cover and refer to the scale markings (10-80mm). The customer aimed to produce dough weighing approximately 78.7 grams. Using the provided dough recipe, we first set the scale to around 25mm with the circular handwheel on top. Once the desired setting was achieved, we locked it in place by tightening the black knob beside the handwheel. After securing the setting and reattaching the protective cover, production could begin. When producing two doughs simultaneously, the weight is fine-tuned using the adjusting screw. If the two doughs are uneven, the stop position can be adjusted accordingly. If the weight discrepancy in a batch is too large, select the stop with the greatest difference for correction. Slightly loosen the locking screw, make the adjustment, and then tighten it to reduce the dough size. To increase the weight, first loosen the adjusting screw, then slightly loosen the locking screw, lift the entire block upward, and tighten the locking screw again.

This machine provides five different weight options, and the Canadian customer chose Option 2. The options are as follows:

Option 1: 1 piece per cycle, 100-500g, up to 2,000 pieces per hour  

Option 2: 2 pieces per cycle, 50-250g, up to 4,000 pieces per hour  

Option 3: 3 pieces per cycle, 30-120g, up to 6,000 pieces per hour  

Option 4: 4 pieces per cycle, 10-60g, up to 8,000 pieces per hour  

Option 5: 5 pieces per cycle, 8-30g, up to 10,000 pieces per hour

You can select the appropriate weight based on your baking needs, whether for soft bread, pizza, or other products. Our machines are customizable to accommodate dough weights up to 1,000 grams. For example, this Canadian customer later requested to make large-diameter tortillas using 925-gram dough. We will discuss the details with him and customize the suitable model accordingly.

To clean the large piston, open the tail cover, loosen the connecting rod, remove the piston, clean and oil it, and then reassemble. The conveyor belt can be wiped clean with a damp cloth followed by a dry cloth. An experienced worker can complete the entire cleaning process in less than ten minutes each day. Additionally, the machine’s paraffin oil recovery system can be customized—from an internal return pipe connected to a plastic bottle to an external return box—further simplifying maintenance and cleaning.
