
We recently shipped an orange chicken flouring battering frying line to Mexico. The client specializes in producing orange chicken, a popular snack across North America. Previously, they had purchased our single lane slicer strip cube cutting line to manufacture whole-cut orange chicken breast products, and they were very satisfied with the quality. Over nearly three years of collaboration, in addition to the cubes cutting line, the client also acquired a 300L vacuum tumbler for marinating their orange chicken, and later added a 120-needle brine injector to infuse flavors into their products. This marks their fourth purchase of our equipment. Before placing this order, the client was frustrated with manual marinating and frying of the chicken breast cubes. Their previous process involved preduster, tempura battering, and frying in a small fryer—a method that resulted in low yield and was extremely labor-intensive.

After a month of detailed discussions and on-site process evaluations, we finalized the specifications for this flouring battering frying line. Considering the size and weight of the chicken cubes they aimed to produce, we recommended a line equipped with a 400mm width coating frying line. The system includes a belt conveyor, a preduster, a tempura battering machine, a batter mixer, and a 5-meter-long, 400mm width continuous fryer. This setup fits perfectly into a 40-foot GP container, helping the customer save significantly on shipping costs. Production Calculation and Process Flow
The Mexican customer’s orange chicken measures approximately 2.5 x 3 cm and weighs between 10-15 grams. They require a minimum production capacity of 280 kg per hour. Based on this, we determined that a coating line with at least a 400mm width conveyor belt coating frying line is necessary to meet their needs. Beyond orange chicken, the customer also plans to coat chicken fillets and chicken strips, with projected capacities of 400 kg per hour for fillets and 300 kg per hour for strips. Considering both current and future production needs, we strongly recommended the 400mm coating line, which offers greater flexibility and capacity. After approximately ten days of discussions with management, the client decided to proceed with the 400mm line. Although this option involved a higher investment, they preferred to avoid the risk of purchasing a lower-capacity machine now and then facing idle equipment after expansion.

Site Design Drawings
The Mexico customer site measured only 13 meters in length, 4.3 meters in width, and 3.8 meters in height, making the space quite cramped for our 400mm coating line. Through ongoing communication with the client regarding the drawings, we ultimately decided to customize a continuous frying machine equipped with a 400mm width mesh belt and customize its length 5000mm length to better suit their space constraints. This design allowed the client to comfortably accommodate the machines while maintaining sufficient operational space. According to the drawings, the entire production line is designed to be approximately 12.614mm long and 3.183mm wide. The slight overlap in length results from the mesh belt connections, and the design also accounts for about 1 meter of clearance in width. This extra space facilitates manual maintenance, allowing operators to move freely within the line and monitor the coating process during production.

Detailed Machine Introduction

-Belt Conveyor Machine
After purchasing a tumbling machine in 2024, the customer continued to manually flour the chicken breast pieces following tumbling and seasoning. During predusting, the tumbled chicken pieces tended to be quite sticky, requiring frequent manual turning to prevent them from sticking together and to avoid uneven coating—where one side was heavily coated with flour while the other remained uncoated. The inlet of the preduster machine is deeply recessed, in order to increase capacity, a belt machine was added and connected to it. For our Mexico customer, this belt machine has an outlet height matching the preduster inlet height of 750± 50 mm. The two machines can be connected seamlessly to form an automated production line.Additionally, our conveyor belt features a removable tray for easy cleaning. Excess powder during production falls into this tray, helping to maintain a cleaner workspace and ensuring more consistent coating quality.

–Preduster Machine
Connected seamlessly to our belt conveyor, the VERFOODSOLUTIONS preduster is designed for efficient and uniform flour application. It features an auger at the flour feeding port which ensure a fine, even coating on the product surfaces. A protective mesh cover guarantees operator safety, while a sealed outer cover prevents dust leakage, maintaining a clean work environment. The machine uses synchronously rotating rollers to apply consistent pressure, achieving uniform flour bonding and eliminating uneven coating issues. Its dual-belt system ensures precise flour spreading, reducing material backflow and minimizing dust generation to enhance production hygiene. For flexibility, the coating thickness can be easily adjusted with a side-handle-controlled internal baffle, allowing quick switching between different thicknesses. A side viewing window provides real-time monitoring, and a locking nut ensures stable, secure adjustments. Conveyor-mounted vibrating blocks help remove loose excess flour, resulting in a smooth, uniform coating and stabilizing subsequent processing quality. Additionally, the built-in airflow system blows away unadhered residual flour, leaving only firmly attached flour to optimize baking and breading effects. The machine also includes a cyclone separator and dust collection bin to recycle scattered flour dust, effectively reducing material waste and maintaining a tidy, efficient production environment. All of these design features for the preduster machine work together to ensure an even predusting on the surface of the chicken popcorn, enhancing the flavor and creating a delicious taste for the orange chicken.

-Tempura Battering Machine
This Mexican customer used a mixture of egg liquid, flour, and starch to prepare the batter for their orange chicken. The mixture was quite thick, and the customer was concerned that it might not coat the chicken evenly like hand-battering pieces, which could impact the texture after cooking and seasoning. We customized the batter according to their specifications, achieving the desired consistency, and tested it with our tempura battering machine. The customer was very pleased with the uniformity of the batter application. This machine features vertically adjustable double upper mesh belts, allowing for flexible spacing adjustments to accommodate different product thicknesses. The belts securely press the products, ensuring consistent and even batter coating across various shapes and sizes. This design delivers stable, high-quality processing results, greatly enhancing production precision and efficiency. Additionally, the machine is equipped with an output belt blowing system with adjustable air volume. Operators can customize the airflow according to production requirements to effectively blow off excess batter slurry. This not only improves battering quality but also reduces batter waste, enabling more efficient and refined batter processing.

-Batter Mixer
The tempura battering machine is paired with a 100L batter mixer. Initially, the customer hesitated to purchase this machine, believing their current production volume was not particularly high and that manual mixing was sufficient. However, for the 400mm belt width orange chicken flouring battering frying line, the batter mixer is a must for the batter mixing otherwise the working efficiency by hand is too slow. We strongly recommended the batter mixer because it offers rapid, uniform mixing, ensuring consistent batter quality. The machine features an insulated jacket, allowing customers to add ice for maximum insulation and maintain batter freshness. Additionally, it is equipped with a water pump and an inlet pipe that directly feeds batter into the connected Tempura battering machine. The inlet pipe is reversible—when batter needs to be pumped, it can be oriented toward the batter tank; when not in use, its direction can be reversed to prevent any disruption to normal production.

-Industrial Continuous Fryer
Given the space constraints, we customized a 400mm width industrial continuous fryer, saving 20cm in width compared to the standard model. To address concerns about excessive oil consumption and high power usage, we reduced the overall frying area by 30cm, resulting in a 30% reduction in oil usage. The oil storage tank volume was also scaled down accordingly. This industrial continuous fryer features an intuitive full-English control cabinet, enabling precise adjustments of frying temperature, frying time, mesh belt transmission speed, and belt lifting parameters. This allows operators to easily optimize the frying process and increase productivity. The fryer adopts a double mesh belt structure with vector variable frequency regulation, preventing food floating and ensuring thorough, even frying. The height-adjustable upper belt accommodates products of different thicknesses, while the PTFE input belt offers excellent non-stick, corrosion-resistant, and high-lubrication properties to prevent product adhesion and extend service life. Designed with safety in mind, the system includes a reliable lifting mechanism for the mesh belt and exhaust hood, operated via column-mounted switches with automatic limit stops. This setup supports independent or synchronized lifting for easy cleaning. A safety bar prevents accidental falling of the elevated belt bracket. Additionally, an automated longitudinal slag scraping system continuously removes frying oil residues, collecting them in a designated cart to reduce oil contamination. We also designed the flue location, allowing the customer to install the fume extraction system according to our plan before receiving the equipment, ensuring it could be put into operation immediately upon arrival. Each unit undergoes rigorous pre-shipment no-load testing by professional engineers and QC teams to ensure full functionality, stable operation, and reliable performance, ready for seamless production from day one.

Voltage Customization
Designed to meet diverse global power standards, this orange chicken coating and frying line features fully customizable voltage and frequency options to match specific on-site electrical requirements. For this Mexican customer, the entire line was precisely configured for 440V, 60Hz, 3-phase power, ensuring perfect electrical compatibility and stable operation. This tailored electrical setup maximizes power efficiency and supports consistent, full-capacity performance across all stages of production—including predusting, tempura battering, and continuous frying—facilitating stable, high-quality long-term commercial operation.
